Boost your energy by eating these healthy cookies - instead of sugary alternatives.  Stare down those pastries in the case, and pull one of these out instead!

5 tbsp maple syrup

1 tbsp agave nectar

5 tbsp tahini

1/4 cup instant oats

1/4 cup sunflower seeds

1/4 cup unsweetened coconut flakes

1/2 cup dark choc buttons - or carob chips


1.  Heat oven to 375 degrees.  Spray a 9x9 pan with cooking spray - or coat with coconut oil

2.  Mix first 6 ingredients in a bowl.  Make sure all is well combined.  Use a spatula sprayed with cooking spray to spread mixture into a pan , bake for 15- 18 mins - or until top is golden

3.  Remove from oven - sprinkle cookie crust with dark chocolate or carob chips.  Cover with a cookie sheet and let sit 5 mins to melt chocolate.  Remove pan and spread chocolate over cookies.  Cool in fridge - cut into 16 squares
